| RECIPES: Pecan Coffee Cake and Amaretto Iced Coffee |

Here's your Print & Save Recipes of the Month . . .
Here's a fabulous coffee cake recipe for all you pecan
lovers and Amaretto Iced Coffee for those nice hot
summer days!
Cake:
1 yellow cake mix**
1 cup plus 2 tablespoons milk**
1/4 cup vegetable oil**
3 eggs**
1-teaspoon maple or vanilla extract**
Filling:
1/3 cup packed brown sugar**
1/3 cup chopped, toasted pecans**
1 teaspoon ground cinnamon**
Preheat oven to 350 degrees F. **Grease and flour
tube
or 12-cup bundt cake pan. **Mix cake ingredients in a
large bowl. **Pour half of the batter in the prepared
cake
pan. **Mix filling ingredients and sprinkle half on top of
the batter in pan. **Add
rest of batter to pan and top with remaining filling.
**Bake for 45 to 50 minutes. Cool for 30 minutes on
wire
rack. **Remove cake from pan and serve warm.
One for the road-Amaretto Iced Coffee*
3 cups Sunbelt Coffee**
2 cups Vanilla ice cream**
1 cup Milk**
2 tsp Vanilla extract**
1 tsp Almond extract**
1/4 cup Amaretto**
Crushed ice**
In a blender, combine everything except ice. Blend until
smooth.
Fill 6 tall glasses with crushed ice, then pour coffee
mixture over ice. Serves 6.
